SOY AMIGO SALAD
Soy Amigo Salad
This is a recipe of my favorite restaurant, Native Foods. Vegan and delicious/nutritious. This is my favorite salad of all time. (:
CATEGORIES
INGREDIENTS
- Servings: 6
- Preparation Time: 1 hour
- 2 cups finely shredded romaine lettuce
- 2 cups finely shredded green cabbage
- ¼ cup basic balsamic vinaigrette (optional)
- 2 cups veggie taco meat
- 2 ½ cups salsa fresco
- ½ cup chipotle ranch dressing
- 1 ½ cup corn tortilla chips, can crush if large
- ½ cup loosely packed fresh cilantro leaves
- ½ cup chopped green onions
- ½ cup sliced black olives
- ½ cup fresh /frozen corn
- 1 avocado, sliced
- Taco Meat: (can buy in store premade with veggie meats) OR
- 1 cup textured soy protein granules
- 1 cup water
- ¼ cup soy sauce
- 2 tbsp.olive oil
- 1 tsp. cumin powder
- 1 tsp.ground coriander
- ¼ tsp garlic powder
- ¼ tsp. onion powder
- Note: Can use a Mexican seasoning spice instead of individual spices.
- Place ingredients in saucepan and bring to a boil. Remove from flame, cover, let sit 10 minutes.
- Salsa Fresca
- 2 cups chopped fresh tomatoes
- ½ cup chopped red onion
- 1 cup lightly chopped fresh cilantro
- ¼ cup lime juice
- 1 ½ tsp sea salt
- Mix all ingredients in a bowl.
- Chipotle Ranch Dressing
- 1 ¼ cup vegan mayonnaise
- ¼ tsp garlic powder
- ¼ tsp.onion powder
- ¼ tsp. sea salt
- ½ tsp. black pepper
- 2 tsp. finely chopped parsley
- ¾ cup soy milk
- 4 tsp. chipotle sauce (can use your favorite hot sauce if can’t find chipotle in store)
- Wisk all ingredients in a bowl. Refrigerate and serve over salad.
