SOY AMIGO SALAD

Ingredients

  • 2 cups finely shredded romaine lettuce
  • 2 cups finely shredded green cabbage
  • ¼ cup basic balsamic vinaigrette (optional)
  • 2 cups veggie taco meat
  • 2 ½ cups salsa fresco
  • ½ cup chipotle ranch dressing
  • 1 ½ cup corn tortilla chips, can crush if large
  • ½ cup loosely packed fresh cilantro leaves
  • ½ cup chopped green onions
  • ½ cup sliced black olives
  • ½ cup fresh /frozen corn
  • 1 avocado, sliced
  • Taco Meat: (can buy in store premade with veggie meats) OR
  • 1 cup textured soy protein granules
  • 1 cup water
  • ¼ cup soy sauce
  • 2 tbsp.olive oil
  • 1 tsp. cumin powder
  • 1 tsp.ground coriander
  • ¼ tsp garlic powder
  • ¼ tsp. onion powder
  • Note: Can use a Mexican seasoning spice instead of individual spices.
  • Place ingredients in saucepan and bring to a boil. Remove from flame, cover, let sit 10 minutes.
  • Salsa Fresca
  • 2 cups chopped fresh tomatoes
  • ½ cup chopped red onion
  • 1 cup lightly chopped fresh cilantro
  • ¼ cup lime juice
  • 1 ½ tsp sea salt
  • Mix all ingredients in a bowl.
  • Chipotle Ranch Dressing
  • 1 ¼ cup vegan mayonnaise
  • ¼ tsp garlic powder
  • ¼ tsp.onion powder
  • ¼ tsp. sea salt
  • ½ tsp. black pepper
  • 2 tsp. finely chopped parsley
  • ¾ cup soy milk
  • 4 tsp. chipotle sauce (can use your favorite hot sauce if can’t find chipotle in store)
  • Wisk all ingredients in a bowl. Refrigerate and serve over salad.
