12 oz. spaghetti
3 tbsp. olive oil
3 oz pancetta, chopped into 1/2" pieces
2 tsp. cracked black pepper
1 1/2 cups grated parmesan
1 egg plus three yolks
2 tbsp. chopped parsley
Heat oil in skillet.
Add pancetta and cook until lightly browned.
Add pepper and cook until fragrant.
Transfer mixture to bowl.
Add eggs and cheese and stir.
Bring water to boil and cook pasta.
Reserve 3/4 cup pasta water and add pasta to mixture.
Toss with parsley, adding pasta water to make sauce creamy.
Season with salt and pepper.
