  • 3 Cups cooked rice
  • 1 large onion chopped
  • 4 stalks celery chopped
  • 1 large green pepper(I use red)
  • 2 cloves garlic minced
  • 1 tbls vegetable oil
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/4 tsp pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup tomatoes chopped
  • 1/2 cup monterey jack cheese


  • Saute onion, celery, pepper and garlic in oil. Add chili powder and cumin. When fragrant add tomatoes, salt, oregano and pepper. When tomatoes are cooked thru, stir in rice. Top with grated cheese and bake long enough for cheese to melt.


I knew there must be better Spanish Rice than the Rice-o-roni brand and I found it.
