Spanish Rice

Serves 6 | Prep Time 5 | Cook Time 35 minutes

Ingredients

2 cups long grain white rice
1/4 cup canola oil
1/2 white onion, grated
3 cloves of garlic pressed in a garlic press
3/4 cup tomato sauce
2 teaspoons salt
3 cup chicken broth


In a 12 frying pan, with a tight fitting lid


Add oil and heat on meduim high


Add rice and saute until golden brown (10 minutes)


Keep stirring


Add onion and saute 4 minutes


Add garlic and saute for 1 minute


Add tomato sauce, chicken broth, and salt


Stir over high to a boil while stirring


Reduce to low


Cover and simmer 20 minutes


Don't open lid


When done, turn off heat . stir and serve

I have tried many rice recipes. This one I put together from other recipes. It has great flavor. Great with my enchilada recipe.
