Spanish Scalloped Corn

Serves 4-6 servings | Prep Time | Cook Time

Ingredients

1 med. onion, chopped
1/2 med. green pepper, chopped
1/4 c. butter
1 c. coarse cracker crumbs
1/4 c. diced pimiento
1 tsp. salt
1/4 tsp. pepper
1 (16-17 oz.) can cream-style corn
2/3 c. milk
2 eggs, beaten


Cook onion and green pepper in butter 'til tender. Add crumbs and cook 'til lightly browned. Add remaining ingredients; mix.


Pour into greased 1 qt. casserole and bake in 375º oven about 35 min. or 'til firm.
