INGREDIENTS

  • Cooking Time: 40
  • Servings: 8
  • Preparation Time: 15
  • 1 chopped green pepper
  • 1 medium onion, sliced
  • 1 carrot, diced
  • 1/4 cup diced celery
  • 2 tomatoes, chopped
  • 1/2 cup oil, your choice
  • 4 pounds whole or sliced fish
  • salt and pepper to taste
  • celery and onion powder
  • flour
  • paprika

DIRECTIONS

Combine all the vegetables and 1/4 cup oil. Brush the baking dish with 1/4 cup oil and spread vegetables in the bottom. Season the fish with seasonings and roll in flour. Place the fish, whole or filet, on the bed of mixed vegetables and sprinkle with paprika.


Preheat oven and bake the fish at 375 or 400 degrees for about 40 minutes basting frequently with cooking juices.


Serve with brown rice or coocoos.
