Sparkling Lemon Ice
1 small package sugar free lemon Jell-O
1 cup boiling water
1 cup sugar free lemon seltzer or diet soda
3 tablespoons fresh lemon juice
1/2 teaspoon grated lemon peel
Completely dissolve the gelatin in the boiling water. Add the seltzer
or sofa, lemon juice, and lemon peel. Pour into an 8 or 9-inch square
pan. Cover. Freeze until firm, about 3 hours.
Remove from the freezer; let stand at room temperature for 10 minutes
to soften slightly. Bet with an electric mixer at medium speed or
process in a blender or food processor until smooth. Spoon or scoop
into individual dishes and serve immediately.
