Special Lemon Cake
1 yellow cake mix
1/2 cup vegetable oil
3/4 cup water
1/4 cup lemon juice
1 1/2 tsp lemon zest
1 cup powdered sugar
lemon juice (approximately 1 1/2 tbsp)
1 tsp lemon zest
Preheat oven to 350 degrees F.
Grease and angel food cake pan.
In a large bowl, mix all of the Cake ingredients. Mix for about two minutes at medium speed.
Pour batter into the prepared pan.
Bake for 50 minutes or until a toothpick inserted in the cake comes out clean. Remove from oven and cool in pan for about ten minutes. Remove cake and put on wire rack to cool.
Make the glaze by mixing the zest into the powdered sugar. Add enough of the lemon juice to make a drizzling consistency. Drizzle over the cake.
