SPEEDY POTATO PANCAKES
Speedy Potato Pancakes
This is the potato pancake I make most often. I've tried many different recipes for potato pancakes, but keep coming back to this one!! It's really very good, especially with Kielbasa!! :O)

PrintINGREDIENTS
- Servings: about 12
- 2 eggs
- 1/2 small onion
- 1 tsp. salt
- 2 Tb. flour
- 1/2 tsp. baking powder
- 3 c. cubed peeled raw potatoes
DIRECTIONS
Put eggs, onion, salt, flour and baking powder into blender container add 1/2 c. potato cubes; cover and blend at grate speed about 1 min.
Add remaining potatoes and blend at chop, or low speed, 'til potatoes are of med. grated consistency, about 1 min.
Bake like pancakes on a hot well-greased griddle. Drain on paper toweling and place in warm oven 'til all cakes are baked
