SPICED NAPOLEON

Ingredients

  • 1/2 box Frozen Puff Pastry
  • 4oz Unsalted Butter
  • 2 teaspoon Ground Cinnamon
  • 2 teaspoon Ground Ginger
  • 5 Tablespoon Confectioners' Sugar
  • 1 cup Strawberries, quartered
  • 1 cup Blueberries
  • 2 cup Ricotta Cheese
  • 1 Tablespoon Bourbon Vanilla Extract
  • 1/3 cup Honey

Directions

  • Combine strawberries, blueberries and 1T sugar. Set aside in fridge.
  • Combine ricotta, honey and vanilla extract. Set aside in fridge.
  • Melt butter with ginger, cinnamon and 2T sugar. Make sure everything is dissolved.
  • Preheat oven to 425°F/220°C. Line 2 baking sheets with parchment paper or plain brown paper; set aside.
  • Unfold puff pastry sheet and trim edges to a 9-inch square. Cut pastry into nine 3-inch squares. Transfer pastry squares to the prepared baking sheets; prick pastry. Brush pastry with butter mixture.
  • Bake in a preheated oven for 18-23 minutes, or until golden. (Or bake according to package directions.) Carefully remove pastries from baking sheet. Cool on a rack.
  • Assembly:
  • Spread 2T ricotta mixture on 1 square.
  • Top with berries.
  • Spread 1T ricotta mixture on 1 square. Place this square on top of the first square, but with clean side up.
  • Spread 2T ricotta mixture on top.
  • Top with berries.
  • Spread 1T ricotta mixture on 1 square. Place this square on top of the first square, but with clean side up.
  • Dust with remaining sugar.
