Spiced Napoleon

Ingredients

1/2 box Frozen Puff Pastry
4oz Unsalted Butter
2 teaspoon Ground Cinnamon
2 teaspoon Ground Ginger
5 Tablespoon Confectioners' Sugar
1 cup Strawberries, quartered
1 cup Blueberries
2 cup Ricotta Cheese
1 Tablespoon Bourbon Vanilla Extract
1/3 cup Honey


Combine strawberries, blueberries and 1T sugar. Set aside in fridge.


Combine ricotta, honey and vanilla extract. Set aside in fridge.


Melt butter with ginger, cinnamon and 2T sugar. Make sure everything is dissolved.


Preheat oven to 425°F/220°C. Line 2 baking sheets with parchment paper or plain brown paper; set aside.


Unfold puff pastry sheet and trim edges to a 9-inch square. Cut pastry into nine 3-inch squares. Transfer pastry squares to the prepared baking sheets; prick pastry. Brush pastry with butter mixture.


Bake in a preheated oven for 18-23 minutes, or until golden. (Or bake according to package directions.) Carefully remove pastries from baking sheet. Cool on a rack.



Assembly:


Spread 2T ricotta mixture on 1 square.


Top with berries.


Spread 1T ricotta mixture on 1 square. Place this square on top of the first square, but with clean side up.


Spread 2T ricotta mixture on top.


Top with berries.


Spread 1T ricotta mixture on 1 square. Place this square on top of the first square, but with clean side up.


Dust with remaining sugar.
