SPICY BLACK BEAN SOUP

Ingredients

  • 1 Tbsp Olive Oil
  • 1 medium onion, finely chopped
  • 4 cloves of garlic, minced
  • 3 15oz cans black beans, undrained
  • 1/2 tsp crushed red pepper
  • 1 tsp ground cumin
  • 14 1/2 oz vegetable broth
  • 1 15 oz can of tomatoes with green chillies
  • 1 cup frozen corn

Directions

  • Saute onion an garlic in olive oil until soft, but not brown. Blend 1 can of beans, add sauteed onion and garlic, crushed red pepper, and cumin. Blend mixture and put in stockpot. Blend second can of beans with broth, and add to stockpot. Stir in unblended third can of beans, tomatoes, and corn. Bring to boil, reduce heat and simmer 20-25 min.
