SPICY CHICKEN OR SHRIMP LO MEIN
Spicy Chicken Or Shrimp Lo Mein
INGREDIENTS
- 6 Dried Shitake Mushrooms
- 1/2 Pkg Lo Mein Noodles
- 1 Chopped Onion
- 1 Cup Frozen Corn, Thawed
- 3/4 Cup Frozen Peas, Thawed
- 5 Cloves Garlic
- 1 Tbsp Ginger, Pressed Or Paste
- 2 Cups Cabbage, Shredded
- 3 Chicken Breasts, Grilled, Sliced
- 1/2 Can Water Chestnuts
- 1/4 Cup Peanuts Or Cashews, Toasted
- 2 Tbsp Toasted Sesame Oil
- 1 Tbsp Peanut Butter (Cruncy Or Smooth)
- 2 Tbsp Soy Sauce
- 3 Tbsp Hoison Sauce
- 2 Tbsp Kimbo Hot Sesame Oil
- May Optionally: Use 9 To 12 Large Shrimp Instead Of Chicken
DIRECTIONS
Boil The 6 Dried Shitake Mushrooms Until Hydrated, Remove Stem Then Slice.
Boil 1/2 Pkg Lo Mein Noodles In Same Water, Drain.
Prep: Chop Whole Onion, Thaw Frozen Corn, Thaw 3/4 Cup Frozen Peas.
Use Garlic Press To Mince 4 To 5 Garlic Cloves, As Well As 1 Tbsp Ginger.
(Mix Garlic, Ginger, Corn And Peas Together)
Shred ~ 2 Cups Cabbage.
Slice The Chicken Breasts - Keep Warm.
Optional: (Or Cook Shrimp).
Slice 1/2 Can Water Chestnuts.
Toast Peanuts Or Cashews.
Stir Fry In 2 Tbsp Oil:
Onions, Garlic, And Ginger For 2 To 3 Minutes
Add Cabbage, Water Chestnuts For 3 To 4 Minutes
Add Corn, Peas, And Mushrooms For 2 To 3 Minutes
(Add Raw Shrimp Now If Using Instead Of Chicken And Stir Fry Until Pink Throughout).
Or, If Using Chicken, Add And Stir For 1 Minute.
Sauce: Mix 1 Tbsp Peanut Butter, 2 Tbsp Soy Sauce, 3 Tbsp Hoison Sauce,
And 2 Tbsp Hot Toasted Sesame Oil.
Add Nuts And Mix Well.
Adjust Flavors If Desired.
Toss Lo Mein Noodles With Sauce And Stir Fry.
Serve
