Spicy Chicken Strips
1 pound skinless boneless chicken breast
3 tablespoons diet margarine -- melted
2 teaspoons red pepper flakes -- crushed
1 small onion -- chopped
1 tablespoon dried parsley
3 cloves garlic -- chopped
1/4 teaspoon salt
1/4 cup rice wine vinegar
Puree all ingredients, except chicken in food processor, until liquid. Cut chicken into
strips, Place chicken into a bowl or a plastic bag. Pour seasoning mix over, toss to coat
chicken. Place chicken in a broiler. Or stir fry in a medium hot nonstick pan, until
completely cooked through. When chicken is about half cooked, baste with marinade.
Then discard remaining marinade.
