Spicy Grilled Sweet Potatoes
3/4 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1 tablespoon olive oil
1 lb sweet potatoes, peeled and cut into 1/4 inch-thick slices
2 tablespoons chopped fresh cilantro
Combine first four ingredients in small bowl.
Combine olive oil and sweet potatoes in medium bowl and toss to coat; Heat grill pan over medium heat; Coat pan with cooking spray; Add potatoes; Cook about 10 minutes turning occasionally.
Place cooked potatoes in a bowl and sprinkle with cumin mixture and cilantro and toss gently to coat.
