Spicy Lentil Soup Cups

Serves 4 espresso sized cups | Prep Time 10 minutes | Cook Time 30-45 minutes

Why I Love This Recipe

Serve this as a starter or a warm canape during party season

Ingredients You'll Need

200g mung lentils
8 cloves of garlic - chopped
1 inch piece of ginger - chopped
2 fresh tomatoes, skinned
Pinch of turmeric
1 heaped tsp of garam masala
1 tbsp vegetable oil
1 tsp cumin seeds
1 tsp chilli flakes
Lemon juice and salt to taste


Wash the lentils. Place in a saucepan and add water so it is a couple of inches higher than the lentils. Add garlic, ginger, tomatoes and turmeric. Bring to the boil, and then simmer until the lentils are soft. Blend until smooth.

Heat oil gently in another saucepan. Add the cumin seeds and gently fry for about 30 seconds. Add the chilli flakes for a few seconds and then tip this spiced oil into the lentil mixture.

Add a squeeze of lemon and salt to taste.

Transfer to espresso cups and serve with mini naan bread.
