Spicy Lentil Soup

2 Tbsp Olive Oil
1 cup Onion, Finely Chopped
1/2 cup Carrot, Finely Chopped
1/2 cup Celery, Finely Chopped
2 Tbsp Salt
1 lb Lentils, Rinsed
1 can Diced Tomatoes
2 qts Chicken Or Vegetable Broth
1/2 tsp Coriander
1/2 tsp Cumin
1/2 tsp Garlic Salt
Cayenne Or Ground Red Pepper To Taste

*Place the olive oil in large pot and set over medium heat 2. Once heated, add the onion, carrot, celery, and salt and sauté until the onions are translucent

*Add the lentils, tomatoes, broth, coriander, cumin, garlic salt, dusting of cayenne/ground red pepper; stir to combine

*Increase the heat to high and bring just to a boil

*Reduce the heat to low; cover and simmer until lentils are tender (about 30-40 minutes)

Recipe Tips

*Leave out the cayenne or ground red pepper for a non-spicy version...although it is far better with a dash of it in there, not to overwhelm, but to give better flavor and some kick

*You can use a hand blender if you want to blend it and get to a bit different/smoother consistency
