Spicy Pumpkin Loaf
2 ½ cups un-sifted all-purpose flour
½ cup wheat germ
3 tsp. baking powder
1 ½ tsp. salt
1 tsp. cinnamon
½ tsp. soda
½ tsp. each, nutmeg and ginger
¼ tsp. cloves
1 ½ cups sugar
½ cup cooking oil
1 ½ canned pumpkin
¼ cup milk
Combine all ingredients except sugar on wax paper.
Stir well to blend.
Cream sugar, oil, and eggs thoroughly.
Add blended ingredients to creamed mixture alternately with milk.
Spread batter in greased 9x5x3 inch loaf pan.
Bake in preheated 350° oven for 60 to 65 minutes or until wooden pick inserted in center comes out clean.
Cool 5 to 10 minutes.
Remove from pan.
Cool on rack.
Wrap in foil or plastic wrap and store at least overnight in fridge or cool place for easier slicing.
Sprinkle with powdered sugar before serving.
