BackstoryI had this at a dinner party and liked neither vegetable in it. When I left, I was making it at least once a week!
- 1 pkg spinach, washed
- 1 zucchini
- 1 small onion
- 1/2 Olive Oil
- 1/2 cup Parmesean cheese
- 1 tsp dried basil
- Use a round or square baking dish that is fairly deep. Pre-heat your oven to 350 degrees.
- Slice the zucchini into rounds, and slice the onions separating them.
- Start with the zucchini and make layers of all three veggies...spinach, zucchini, onion, etc. Once you reach the top, sprinkle with salt, pepper, and dried basil or any other herb you like. Douse with the olive oil and sprinkle on the cheese.
- Bake in the oven for about 30 minutes or until the veggies are done.
