Spinach Artichoke Dip
2 8oz. packages Light Cream Cheese, softened
1 14 oz. can Artichoke Hearts, drained, coarsely chopped
2 packages frozen spinach, defrosted and drained
½ cup Mayonnaise
½ cup Parmesan Cheese
½ cup Romano Cheese
2 cloves garlic, minced
3 leaves fresh basil, chopped
½ cup Shredded Mozzarella Cheese
1-2 small loaves of Italian bread sliced (toasting is optional)
Mix together cream cheese, mayonnaise, Parmesan and Romano cheeses, garlic, and basil.
Add the artichoke hearts and spinach.
Mix until blended. Store until you are ready to use.
Spray a shallow casserole dish with cooking spray, pour in the dip, and top with Mozzarella cheese.
Bake at 350 degrees for 20-25 minutes until the top is golden brown.
Serve immediately with the bread.
