Spinach Artichoke Dip
1/2 sweet yellow onion, finely chopped
4 cloves garlic, pressed
1 10-oz box frozen spinach, defrosted and drained
2 can artichoke hearts in water, drained
2 packages cream cheese, softened
2 tablespoons extra virgin olive oil
1/2 cup sour cream
1/2 cup mayo
2/3 cup grated parmesan cheese
1/4 cup shredded mozzarella
A few pinches red pepper flakes
Salt, to taste
Preheat oven to 350.
Saute onion and garlic in oilve oil. Mix spinach onion, and garlic in a large bowl. Add cream cheese; mix. Add mayo grated cheeses, red pepper flakes and slat; mix well. Add artichoke hearts. Transfer mix to baking dish, bake until hot and bubbly.
Serve with fresh sliced baguette, tortilla chips, and/or fresh veggies.

This can be made up to 1 day in advance and refrigerated until ready to bake.
