1 c frozen chopped spinach (1/2 of a 10 oz package), thawed and drained
1c low-fat cottage cheese
1/2 c part-skim ricotta cheese
1/4 tsp black pepper
2c canned tomato sauce
6 oz uncooked jumbo manicotti (about 8 shells)
2-1/4 oz shredded part-skim mozzarella cheese
Preheat oven to 375 degrees.
In large bowl, combine spinach, cottage and ricotta cheese, salt and pepper until blended. Pur 1c of sauce and 1/4 c water into 11x7 inch baking pan; spread to make even layer.
With teaspoon, stuff each shell with equal amount of cheese mixture;
place in baking pan.
Pour remaining tomato sauce evenly over top.
Cover with foil; bake until shells are tender, about 50 min.
Uncover; sprinkle with mozzarella cheese.
Bake about 10 min longer, until cheese is melted and bubbly.

This is a Weight Watchers recipe that worked its way into my regular dinner rotation. The shells cook in the oven, which makes it super-easy to prepare. It's great paired with a garden salad!
