SPINACH ROMAINE SALAD WITH BACON BALSAMIC VINAIGRETTE DRESSING

Spinach Romaine Salad with Bacon Balsamic Vinaigrette Dressing

A fresh tasting salad with a great balance of sweet, tart and savory.

INGREDIENTS

  • 4 slices thick bacon
  • 1/4 C minced onion
  • 1/2 tsp brown sugar
  • 2 Tbsp balsamic vinegar
  • Sea salt and ground pepper to taste
  • Fresh baby spinach leaves
  • Romaine Lettuce
  • Toasted almonds
  • Dried cranberries

DIRECTIONS

Cut bacon into pieces and fry in a saucepan until crispy.


Meanwhile, remove large stems from spinach leaves, wash and spin spinach and romaine lettuce, set aside.


Toast almonds in a dry saute pan just until lightly browned


Remove bacon with a slotted spoon and place on paper towels to dry.


With bacon drippings still in the pan, add in onions and saute just until soft.


Add in balsamic vinegar and brown sugar.


Add sea salt and pepper to taste.


Lightly drizzle dressing over salad.


Top with toasted almonds and cranberries.
