- 1/4 c. melted butter
- 1 c. milk
- 1 t. baking soda
- 1 pkg (10 oz) thawed and drained frozen spinach
- 8 oz. Monterey Jack cheese, cubed (or Swiss or Mozzarella)
- 3 eggs
- 1 c. flour
Pour melted butter into a 13 x 9-inch pan. In a bowl combine eggs, milk, flour, and baking powder; beat well. Add spinach and cheese; mix well. Pour into pan and combine with butter thoroughly. Bake at 350 degrees (F) for 35 minutes. Cool 5-10 mins and cut into squares.
