SPINACH CASSEROLE

Ingredients

  • 1 pkg (10oz) chopped frozen spinach
  • 1 tbls chopped onion
  • 1 clove garlic minced
  • 1/2 cup chopped mushrooms
  • 2 tbls butter
  • 2 tbls flour
  • 2 hard boiled eggs, chopped
  • 1 cup milk
  • 1/2 tsp salt
  • Dash pepper
  • 1/2 cup buttered bread crumbs
  • 1 tbls grated Parmesan cheese

Directions

  • Cook spinach as directed on pkg, drain
  • Sauté onion, garlic & mushrooms in butter until tender
  • Stir in flour, gradually add milk, cook until thick
  • Add spinach, eggs, salt and pepper
  • Pour into greased casserole dish
  • Combine bread crumbs and cheese, sprinkle over spinach
  • Place under broiler until crumbs are browned, about 5 minutes
