SPINACH CASSEROLE
INGREDIENTS

- Preparation Time: 15
- 1 pkg (10oz) chopped frozen spinach
- 1 tbls chopped onion
- 1 clove garlic minced
- 1/2 cup chopped mushrooms
- 2 tbls butter
- 2 tbls flour
- 2 hard boiled eggs, chopped
- 1 cup milk
- 1/2 tsp salt
- Dash pepper
- 1/2 cup buttered bread crumbs
- 1 tbls grated Parmesan cheese
DIRECTIONS
Cook spinach as directed on pkg, drain
Sauté onion, garlic & mushrooms in butter until tender
Stir in flour, gradually add milk, cook until thick
Add spinach, eggs, salt and pepper
Pour into greased casserole dish
Combine bread crumbs and cheese, sprinkle over spinach
Place under broiler until crumbs are browned, about 5 minutes
