- 2 TBS EVOO
- 1 Leek, Sliced
- 1 large clove chopped garlic
- 1 large bag fresh spinach
- 2 TBS lemon juice
- salt & pepper to taste
- Heat a the EVOO in a lrge pan on medium heat. When oil is hot add leeks and sauté until just golden. Add the garlic salt & pepper and give it a good stir. Add as much spinach as the pan will accommodate and allow it to wilt down. Add the lemon juice while spinach is cooking. Continue adding the leafy greens until you have cooked all you want to. Turn off heat and serve immediately.

NotesThe title pretty much says it all, but this makes and excellent side dish, especially when you are craving some greens.
