Split Pea Vegetable Soup

Serves 3- 1/2 qts. | Prep Time | Cook Time

Ingredients

1 lb. dried split peas (2 c.)
3 qts. water
1 meaty ham bone, or 1 1/2 lbs. ham hocks
2 tsp. salt
1/4 tsp. pepper
1/4 tsp. marjoram leaves
1 1/2 c. chopped onion
3/4 c. chopped carrots
3/4 c. chopped celery


Combine peas and water in lrg. kettle. Bring to a boil. simmer 2 min. Remove from heat, cover and let stand 1 hr.


Add ham bone, salt, pepper marjoram and onions. Cover and simmer 1 1/2 hrs.


Add carrots and celery. Continue simmering 'til tender, 30-40 min. Add more salt if necessary. Serve piping hot.

Usually DH makes the split pea soup in our house!! (He makes one wicked pot of split pea soup!! ) But I have a devil of a time getting him to do it!!! It's about the only time he ever spends in the kitchen and when he's making his soup, I vacate the premises! What a mess he can make and using every single pot and pan!! Don't ask me how one man can make such a mess and use so many different pans and dish!! As long as he cleans up his mess, I just stay far, far, far awya!!! :O) I do get hungry for split pea soup more often than he's willing to make it. So whenever leftover ham or a ham bone is available and I'm really in the mood, this is the best split pea soup recipe I make!!
