SPRING LEMON CHICKEN:

Ingredients

  • 6 servings
  • 3 Bone-In Whole Chicken Breasts (10 to 12 oz. each), Split In Half, Skin Removed 1/8 Tsp. White Pepper
  • 1 Tsp. Olive Oil
  • 1 Tbsp. Grated Lemon Peel
  • 2 Tbsp. Fresh Lemon Juice
  • 1 Tbsp. Honey

Directions

  • Sprinkle chicken evenly with pepper. In 12-inch nonstick skillet, heat oil over mediumhigh
  • heat. Add chicken. Cook for 4 to 6 minutes, or just until brown on both sides. Reduce
  • heat to low. Combine peel, juice and honey in small brown bowl. Brush honey mixture on
  • both sides of chicken pieces. Cover. Cook for 14 to 17 minutes, or until meat near bone is
  • no longer pink and juices run clear.
