Spring Lemon Chicken:

Ingredients

6 servings
3 Bone-In Whole Chicken Breasts (10 to 12 oz. each), Split In Half, Skin Removed 1/8 Tsp. White Pepper
1 Tsp. Olive Oil
1 Tbsp. Grated Lemon Peel
2 Tbsp. Fresh Lemon Juice
1 Tbsp. Honey


Sprinkle chicken evenly with pepper. In 12-inch nonstick skillet, heat oil over mediumhigh


heat. Add chicken. Cook for 4 to 6 minutes, or just until brown on both sides. Reduce


heat to low. Combine peel, juice and honey in small brown bowl. Brush honey mixture on


both sides of chicken pieces. Cover. Cook for 14 to 17 minutes, or until meat near bone is


no longer pink and juices run clear.
