off the top of my head, wanted tiramisu and thought it couldn't be that hard! went down a storm with the other half x


  • 500g marscapone
  • 5 tbsp golden caster sugar
  • 5 tbsp marsala
  • 2 eggs seperated
  • cocoa powder for dusting
  • sponge finger biscuits
  • very strong coffee- about 1/2 pint boiling water to 5 tbsp coffee granules


  • 1- seperate the eggs, put whites to one side
  • 2- place marscapone, sugar, marsala into a large mixing bowl and mix well
  • 3- add the egg yolks and whisk until smooth and silky
  • 4- in a seperate bowl, whisk the egg whites to soft peak stage
  • 5- fold the whites through the marscapone mixture gently, keeping it light
  • 6- dip the finger biscuits into the coffee and place a single layer in a dish
  • 7- add a layer of the cream mixture
  • 8- add another layer of sponge fingers dipped in coffee
  • 9- finish with a last layer of the cream mixture and dust with cocoa
  • 10- refrigerate for a couple of hours-overnight would be great too!
