sponge finger biscuits
very strong coffee- about 1/2 pint boiling water to 5 tbsp coffee granules

- seperate the eggs, put whites to one side

- place marscapone, sugar, marsala into a large mixing bowl and mix well

- add the egg yolks and whisk until smooth and silky

- in a seperate bowl, whisk the egg whites to soft peak stage

- fold the whites through the marscapone mixture gently, keeping it light

- dip the finger biscuits into the coffee and place a single layer in a dish

- add a layer of the cream mixture

- add another layer of sponge fingers dipped in coffee

- finish with a last layer of the cream mixture and dust with cocoa
