SPUR OF THE MOMENT TIRAMISU
Spur of the Moment Tiramisu
off the top of my head, wanted tiramisu and thought it couldn't be that hard! went down a storm with the other half x

- 500g marscapone
- 5 tbsp golden caster sugar
- 5 tbsp marsala
- 2 eggs seperated
- cocoa powder for dusting
- sponge finger biscuits
- very strong coffee- about 1/2 pint boiling water to 5 tbsp coffee granules
DIRECTIONS
1- seperate the eggs, put whites to one side
2- place marscapone, sugar, marsala into a large mixing bowl and mix well
3- add the egg yolks and whisk until smooth and silky
4- in a seperate bowl, whisk the egg whites to soft peak stage
5- fold the whites through the marscapone mixture gently, keeping it light
6- dip the finger biscuits into the coffee and place a single layer in a dish
7- add a layer of the cream mixture
8- add another layer of sponge fingers dipped in coffee
9- finish with a last layer of the cream mixture and dust with cocoa
10- refrigerate for a couple of hours-overnight would be great too!
