SQUASH PICKLES
Squash Pickles
1 tsp celery seed

INGREDIENTS
- 8 c. thinly sliced yellow squash
- 2 c. thinly sliced onions
- 4 green bell peppers-sliced
- salt
- 3 c sugar
- 1 Tsp mustard seed
- 2 c cider vinegar
- 1 tsp celery seed
DIRECTIONS
Slice vegetables 1/4" thick. Cover with 1/4 cup salt, mix well, let stand for 1 hour. Drain. Rinse with cold water. Bring all ingredients to a boil. Pack into jars leaving ½” head. Pour into prepared jars. Seal.
Makes 4 pints.
