SQUASH PICKLES

Ingredients

  • 8 c. thinly sliced yellow squash
  • 2 c. thinly sliced onions
  • 4 green bell peppers-sliced
  • salt
  • 3 c sugar
  • 1 Tsp mustard seed
  • 2 c cider vinegar
  • 1 tsp celery seed

Directions

  • Slice vegetables 1/4" thick. Cover with 1/4 cup salt, mix well, let stand for 1 hour. Drain. Rinse with cold water. Bring all ingredients to a boil. Pack into jars leaving ½” head. Pour into prepared jars. Seal.
  • Makes 4 pints.
