Why I Love This Recipe

One of my aunt's first made this pie and everyone loves it, it uses summer squash (yellow) but you'd never know that it's squash, delicious, I've made it many times for church potlucks (everyone always asks for the recipe) I have even made it and brought it to work people are shocked when you tell them that it's squash

Ingredients You'll Need

1 1/2 cups cooked yellow squash
1 1/4 cups sugar
4 eggs, separated
1/2 stick butter or margarine, melted
1/2 cup canned evaporated milk
1 tsp lemon flavoring
2 9" regular pie shells
Nutmeg (optional)


Directions

Cook squash in salt water until tender


Drain water off


Mix squash, sugar, egg yolks, butter, milk and lemon flavoring


Beat egg whites until stiff.


Fold egg whites into squash mixture


Pour into pie shells


Sprinkle with nutmeg if desired


Bake at 350 degrees for 40 minutes
