Squash and Chorizo Casserole
1 T. butter
1 large onion, diced
1 large or 2 small squash, diced
1 large Chorizo link (about 10 inches long)
1/2 c. grated Parmesan
1 c. Bisquick
salt and pepper, to taste
Preheat oven to 350. Spray an 8 X 10 casserole dish with nonstick spray.
Melt the butter in a medium size saute pan. Add onion and cook for 3 - 4 minutes. Add chorizo and cook while breaking it up with a wooden spoon. Let cook for another 2 - 3 minutes. Add squash and saute until squash just begins to soften. Season to taste with salt and pepper. Set aside to cool.
When squash mixture has cooled, place in a large mixing bowl. Mix in eggs, Parmesan, and Bisquick. Stir well.
Pour into prepared pan.
Bake at 350 for 35 - 40 minutes or until golden brown.
