SQUASHY CASSEROLE

Ingredients

  • 2 small yellow squash, shredded yielding 2 cups
  • 2 small zucchini, shredded yielding 2 cups
  • 3 cups boxed stuffing mix
  • 1/4 cup butter melted
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup shredded carrot
  • 1/2 cup shredded white cheddar cheese

Directions

  • Preheat over to 350
  • mix stuffing and butter reserve about 1/2 cup aside. Spon rest into 2 qt baking dish
  • mix soup, sour cream, squashes and carrots and cheese. spread over stuffing and top with reserved stuffing mixture.
  • Bake for 40 minutes

Notes

Good for when you have a bunch of squash growing in the garden
