Squirrel Stew

INGREDIENTS

  • Cooking Time: 180
  • 1 squirrel, cut up
  • all purpose flour
  • salt and pepper
  • 2 1/2 Tbsp butter
  • 7 cups boiling water
  • 1 tsp thyme
  • 1 cup corn
  • 3 potatoes, cubed
  • 3 medium onions, sliced
  • 2 cups tomatoes, canned
  • 1/4 tsp cayenne pepper

DIRECTIONS

1 Dredge squirrel pieces in flour, salt, and pepper.



2 Brown in butter.



3 Add squirrel and all ingredients except the tomatoes to the boiling water.



4 Cover and simmer for 1 to 2 hours.



5 Add the tomatoes and continue to simmer for another hour.
