"Honey sriracha meatballs"

Serves 8 servings | Prep Time 20 minutes | Cook Time 25 minutes

Why I Love This Recipe

These meatballs have a bit of a kick to them. Great to meal prep at the start of the week for lunches.


Ingredients You'll Need

For the meatballs:
2 lb lean ground turkey
1 cup panko breadcrumbs
2 eggs
1/4 cup chopped green onions
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper

For the sauce:
1/4 cup sriracha
3 tablespoons soy sauce
3 tablespoons rice vinegar
3 tablespoons honey
1 tablespoon grated fresh ginger
3 cloves garlic, minced
1/2 teaspoon sesame oil


Directions

Preheat over to 375


In a large bowl mix together all the meatball ingredients until well combined. Shape mixture into 1 1/2 inch balls (you'll make approx. 40 meatballs) and place spaced apart on prepared baking sheet


Bake meatballs for 20 to 25 minutes or until browned and cooked through


While the meatballs cook, combine all the ingredients for the sauce in a small saucepan or pot and bring to a boil over medium heat, whisking continuously. Reduce heat and let simmer for 8 to 10 minutes until thickened. Then toss with meatballs.


Serve over brown rice with green onions and sesame seeds.
