50 gram dill
6 bay leaf
1 tablespoon sweet mustard
1 tablespoon meat seasoning
1 tablespoon olive oil (frying, confit)
4 basil leaves
0.5 lemon
7 allspice
10 gram red bell pepper
400 gram pork tenderloin
1 tablespoon iodized salt
Directions
Get the pork tenderloin and thoroughly wash it, then dry it with a paper towel (to prevent excess humidity) and cut the tenderloin into steaks, each about 5 cm thick. Make cuts along the fibers in order for the meat to get fried better.
Prepare the lemon juice for the marinade. Take a half of a lemon and juice it using a citrus press or you can squeeze the juice out manually.
The next step is to rub the meat with salt and to marinate it.
So, take 1 tablespoon of honey mustard, the obtained lemon juice, 5-6 bay leaves, 5-7 allspice peppercorns, 10 g of red paprika, a few basil leaves and a tablespoon of meat seasoning (in this case for pork, the seasoning should be based on herbs and can be substituted by Italian or Provence herbs if the pork is high in fat).Thoroughly mix everything together and leave to marinate for 1-1.5 hours.
Preheat the frying pan and add the olive oil for frying.
Fry the prepared and marinated meat on maximal heat on a hot frying pan for 2-3 minutes from each side to obtain a crispy crust, then fry in for another 5 minutes from each side, so the pork is ready.
After the meat is prepared add some dill and that's all - the meat is ready. Enjoy your meal !!!
