Steak Spinach Salad with Red Pepper, Mozarella and Sauteed Red Onions
1 Package Baby Spinach Leaves
1/2 lb T-Bone Steak, Thinly Sliced
1/2 C. Red Onion, Sliced
1 Red Bell Pepper, Sliced
1/2 C. Mozarella Balls
1 C. Cucumber, Diced
Season Steak with Salt, Pepper and marinade of choice.
I used a Soy Sauce based mixture with Garlic.
Cook over Medium Heat until medium-rare.
Transfer to plate and cover with Aluminum Foil to rest.
Roast Red Pepper over gas flame or Broil in Oven, charring each side evenly.
Place in plastic bag to loosen skin, then peel and slice.
Saute Onions in the same pan steak was cooked in, deglazing slightly to flavor onions.
Season with salt and pepper.
In a large bowl, mix together all ingredients and top with dressing of choice.
