My husband loves pancakes, so I am always trying to come up with ways to make them healthy for him but that he will still enjoy - it's a constant challenge, but this was one that he did like.


  • 2 eggs, beaten
  • 3/4 c flour
  • 1 1/2 c buttermilk
  • 1 1/2 t baking powder
  • 1/2 t baking soda
  • 3/4 c oats
  • 1 c crushed Kashi heart to heart cereal
  • 1/4 t salt
  • 1/4 t cinnamon
  • 1/4 c sugar
  • country crock spread for cooking


  • Mix all dry ingredients together, blending thoroughly
  • Add wet ingredients and stir together enough to blend, using silicone spatula to scrape down edges
  • Allow mixture to set for about 30 minutes
  • Put a small amount of country crock on frying pan over medium low and pour out batter in about 6" rounds
  • Let pancakes cook until bubbles come up in center of cake and they are golden brown and edges are crispy
  • Turn pancakes and cook until golden brown and centers bounce back
  • Serve hot
