Stir Fry Pizza
1 Boboli pizza or 1/2 Yeast Crust Recipe
3 skinless, boneless chicken thighs, cut into 1/2" pieces
1/3 cup plum jelly
1/4 cup chili sauce
1 tsp. lemon juice
1 cup sliced mushrooms
1 onion, chopped
1-1/2 cups shredded Monterey Jack cheese
1-1/2 cups shredded mozzarella cheese
Make and prebake crust, if using.
Preheat oven to 400 degrees.
In small saucepan, combine plum jelly, chili sauce, and lemon juice.
Bring to a boil, then reduce heat and simmer 5 minutes until thickened, stirring frequently.
Spread on Boboli crust or partially baked crust.
In large skillet, saute chicken in oil for 3 minutes (if using shrimp, saute with vegetables). Add mushrooms and onion and cook for 3-5 minutes longer.
Drain mixture and sprinkle over sauce on the pizza crust.
Top with shredded cheeses and bake at 400 degrees for 8-14 minutes until crust is golden brown and cheese is melted.
