Stir fried chicken & rice
chicken breast stir fry strips 500g
green shallots, 4, thinly sliced
ready-cooked microwave basmati rice 1 x 250g packet
Thai-style frozen vegetables 350g
soy sauce 2 tbs
sweet chilli sauce 2 tbs
lemon juice 2 tbs
lemon 1, cut into wedges
1. Spray a large non-stick frying pan or wok with oil. Heat over medium heat. Add the chicken strips and shallots. STir fry 5 mins or until golden and cooked through.
2. While the chicken is cooking, microwave the rice and frozen Thai-style vegetables following packet instructions. Add to the pan and stir to combine.
3. Combine the soy sauce, sweet chilli sauce and lemon juice and stir into the pan. SErve immediately with lemon wedges.
