Stir-fry Chicken

This has to be one of my favorite recipes!

 


CATEGORIES

INGREDIENTS

  • 2 tsp vegetable oil, divided
  • 1 tsp sesame oil, divided
  • 1 1/2 Tbsp ginger root, finely chopped (I use the ground ginger)
  • 3 or so garlic cloves minced/pressed
  • 1 pound skinless, boneless, chicken breast, cut into bite size pieces
  • 1-2 coloured pepper, chopped (red/orange/yellow) {I usually use 2 peppers}
  • 2 cups of chopped broccoli
  • 2 Tbsp low-sodium soy sauce
  • Approx. 20 cashews, roasted, unsalted, roughly chopped

DIRECTIONS

Heat a large nonstick skillet over high heat.


Add 1 tsp of vegetable oil, 1/2 tsp of sesame oil, ginger and garlic; cook 15 seconds.


Add chicken and stir-fry until starting to brown, about 3 to 4 minutes; remove to a plate.


Add reamining tsp of vegetable oil, pepper and broccoli to same skillet and stir-fry for 3 minutes.


Add chicken back to skillet, pour in soy sauce and cook, stirring, until chicken is cooked trough, about 2 minutes more.


Toss with remaining 1/2 tsp of sesame oil.


Sprinkle on cashews and serve.


I also serve this over brown rice that I have cooked in chicken broth, and just add a little more soy sauce to the rice.
