Strawberry Cheesecake Squares
2 cups flour
3/4 cup brown sugar
3/4 cup chopped almonds
3/4 cup butter
2 pkgs. (8 oz. each) cream cheese
1/2 teaspoon almond extract
1/2 cup sugar
Crust: Combine all crust ingredients. Reserve 3/4 cup for the topping. Press the remaining crumbs into a 8-in. square cake dish. Bake in a pre-heated oven set at 350ºF for 12-15 minutes.
Prepare the filling: Combine and mix all ingredients well. Pour over the hot baked crust. Return to the oven and bake for 15 minutes.
Stir 1 cup of strawberry jam well. Spread over the baked cream cheese mixture. Sprinkle the reserved crumb mixture over the strawberry jam. Return to the oven for the final 15 minutes of baking. Allow to chill well before serving.
Notes: Line the pan with foil for easy removal of the cut squares. Heat the strawberry jam a little to make it more spreadable.
