- 2 large strawberries (fresh or frozen)
- 4 ozs. cream cheese
- 1/2 c. powdered sugar
- 2 large eggs
- 1 Tb. milk
- 1/8 tsp. ground cinnamon
- 1 tsp. sugar
- 1/8 tsp. vanilla
- 8 slices bread
- Put the first three ingredients into a blender & mix on high until smooth.
- Beat eggs, milk, cinnamon, sugar & vanilla with a whisk until well mixed. Spread all 8 slices of bread with the strawberry mixture. Put 2 slices of bread together sandwich style with the strawberry mixture in the middle. Dip each of the 4 sandwiches in the egg mixture. Pour oil on a hot griddle, 350 degrees, & put the toast in the oil, cooking until golden brown, turning once. Serve with either maple syrup or fresh berries and whipped cream.
