Strawberry Shortcake Cups

Serves 8 servings | Prep Time About 15 minutes | Cook Time 12 minutes

Ingredients

1 quart fresh strawberries
4 tbsp sugar, divided
1 1/2 cups flour
1 tbsp baking powder
1/2 tsp salt
1/4 cup cold butter, cubed
1 egg
1/2 cup milk
Whipped Cream


Mash or slice the strawberries


Place in a large bowl


Add two tablespoons of the sugar


Set aside


In another bowl, combine the flour, baking powder, salt, and the remaining sugar


Cut in the butter until crumbly


In a small bowl, beat the egg and milk


Stir into the flour mixture just until moistened


Fill the eight greased muffin cups two-thirds full


Bake at 425 for 12 minutes or until golden


Remove from the pan to cool on a wire rack


Just before serving, split the shortcakes in half horizontally


Spoon the berries and whipped cream between the layers and over the top
