Fresh strawberries, in season, washed, hulled and cut up
Sugar, less for really ripe strawberries, more for less ripe
Bisquick Baking Mix
Oil in place of melted butter
Milk, enough to make batter
1/2 pt. whipped cream
Place cut up strawberries in a bowl. Add sugar to taste.
Prepare shortcakes according to Bisquick box directions, making them smaller than the box instructs.
Place mixing bowl and beaters in the freezer so they become really cold. Beat whipping cream and add sugar a little at a time while it is beating. Once peaks form, STOP, or you will make butter.
Assemble shortcakes and top with whipped cream.
