Strawberry Shortcake

Ingredients

2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 stick cold butter, cut in piecees
1 cup milk
3 pints strawberries, hulled
3/4 cup sugar
1 cup heavy whipping cream
1/2 teaspoon vanilla


Heat oven to 400 degrees. Have a cookie sheet ready. Mix flour, sugar, baking powder and salt in a large bowl. Add butter and cut in with a pastry blender until mixture resembles coarse crumbs. Add milk and stir with a fork until a soft dough forms. Drop 8 heaping spoonfuls on ungreased cookie sheet. Bake 12-14 minutes until golden brown. Remove shortcakes to a wire rack to cool. Meanwhile mash 1 cup stawberries in a medium bowl. Stir in sugar. Slice and stir in remaining berries. In another medium bowl, beat cream, sugar and vanilla until soft peaks form. Cut shortcakes in half. Spoon berries and cream on bottom halves. Replace tops.
