STRAWBERRY SPINACH SALAD

Ingredients

  • Dressing:
  • 1 cup white balsamic vinegar
  • 1 ½ cups olive oil
  • 3 cloves garlic
  • Juice of one lemon
  • 1 Tbls. Dijon mustard
  • Candied Walnuts:
  • 1 bag walnut halves
  • 3 Tbls. butter
  • 3 Tbls. sugar
  • 2 Tsp. cayenne pepper
  • Salad:
  • 1 bag baby spinach
  • 1 head green leaf lettuce
  • 1 pint strawberries, sliced
  • 1 large cucumber, sliced
  • 1 pint grape tomatoes
  • 1 cup gorgonzola cheese, crumbled (reserve half)

Directions

  • Dressing:
  • Combine garlic, vinegar, juice, mustard, and salt and pepper to taste in a blender or food processor. Blend
  • on low speed, adding oil slowly in a very thin stream. Continue until all oil is combined and dressing is creamy.
  • Candied Walnuts:
  • Blanch nuts in melted butter over medium heat. Toss warm nuts in a plastic bag with sugar and cayenne
  • pepper until well coated.
  • Salad:
  • Combine all ingredients in a large bowl, toss with dressing.
  • Plate and sprinkle with reserved gorgonzola. Top with candied walnuts.
