- 1 cup sugar-free strawberry preserves (see Options)
- 1/4 cup balsamic vinegar
- 1/4 cup Dijon mustard
- 1/2 teaspoon ground pepper
- 1/2 cup olive oil
- 1/2 cup water
- In a medium bowl, whisk together the preserves, vinegar, mustard, and pepper until thoroughly combined.
- Gradually whisk in the olive oil then the water. Serve immediately, or keep chilled until ready to serve.
OPTIONS: You can use a different flavor preserves, if you prefer. This is terrific over any tossed salad.
