INGREDIENTS

  • Servings: 5
  • Preparation Time: 10 min
  • 1/2 c pine nuts
  • 1 T butter
  • 2 T EVOO
  • 1 T strawberry balsamic vinegar
  • 1/4 t salt
  • 1/4 t pepper
  • 1 t sugar
  • 1 heart romaine lettuce, torn into bite-sized pieces
  • 1 pint strawberries, hulled and sliced
  • 4 oz mozzarella, cubed
  • 1 small red onion, sliced

DIRECTIONS

In small saucepan, toast the pine nuts in the butter, stirring or shaking frequently so they don't burn.


Whisk together the EVOO, strawberry balsamic vinegar, sugar, salt and pepper.


Toss the lettuce with half the dressing.


Pour the remaining dressing over the strawberries and mix to coat.


Gently toss the strawberries with the lettuce.


Sprinkle the mozzarella, red onion and pine nuts over the top.


RECIPE BACKSTORY

I saw this recipe on Food Network and tried it. It was OK, but the dressing was too tart and, although we all love basil, it was lost in this recipe. We preferred the Poppy Seed Strawberry Salad we usually make, so I changed this recipe up a bit to include strawberry balsamic vinegar and some sugar in the dressing, omitted the basil and included some red onion and toasted pine nuts and it went over much better the second time around.
