1 c. butter, softened
1 c. sugar
2 c. all-purpose flour
3/4 c. pecans, coarsely chopped
1 - 10 oz. jar strawberry or
Powdered sugar icing
In a medium bowl, beat butter and sugar on medium speed until combined, scraping
sides of bowl occasionally.
Beat in egg.
Beat in as much flour as you can with the mixer. Stir in any remaining flour.
Stir in pecans.
Set aside 1 cup of the pecan mixture.
Press remaining mixture into the bottom
of an ungreased 9x9x2 inch pan.
Spread preserves to within 1/2 inch of the edges of the bottom crust.
Dot the reserved 1 c. pecan mixture on top of the preserves.
Bake at 350 degrees for 40-45 minutes or until top is golden.
Cool on a wire rack.
Drizzle with icing.
Cut into bars.
Makes 24 bars.
