STRING BEAN POTATO SALAD

Ingredients

  • 4 red potatoes
  • 1 pound green beans
  • 2 tomatoes, sliced
  • 1/2 red onion, chopped
  • 1/3 cup olive oil
  • 1/3 cup vinegar
  • 1/4 teaspoon oregano
  • 1 teaspoon salt

Directions

  • Cook potatoes just until tender; drain, cool, and slice. Cook beans until crisp-tender; mix with tomatoes and onion. Add oil and seasonings; let marinade in refrigerator 1 hour or longer.
